Stir- Fried Mushrooms with Eggplant

Ingredients:
- Hokto Bunashimeji
- 1 Pack
- Hokto Maitake
- 1 Pack
- Eggplants
- 2
- Chicken
- 100g
- Sesame Oil
- 2 tbsp
- Miso
- 3 tbsp
- Sugar
- 2 tbsp
- Large Ginger
- 1 Piece
- Rice Vinegar
- ¼ cup
- Salt

How to Make:

Step 1
Start by removing the root from the Bunashimeji mushroom, separate it into smaller pieces along with the Maitake mushroom.

Cut the eggplant into bite-sized pieces and chop the ginger into thin pieces.

Next, heat a pan, add sesame oil and stir-fry the chicken. Add a small amount of the eggplants and season with salt and pepper.

Fry the rest of the eggplants over high heat and add in the mushrooms.

Continue to stir-fry and add the sugar, ginger, and miso.
