Italian Style Vegetable Soup with Hokto Mushroom

- Sweet Potato
- 1
- Cabbage
- 1 Piece
- Olive Oil
- 2 tbsp
- Salt
- 1 tsp
- Chili Powder
- 1 tbsp
- Water
- 600ML
- Pepper
- White Radish
- Chopped Basil Leaves

How to Make:

Step 1
Start by removing the root from the mushrooms, and chopping the onion and garlic.

Cut the sweet potato and white radish into 1.5cm pieces without peeling their skin. Then, cut the cabbage into smaller pieces, and chop the green onion.

Next, heat olive oil in a pot and add the onions, garlic and stir-fry until they change colour. Add chilli powder and the previously chopped sweet potato, white radish, cabbage, mushrooms and green onions.

Then, add some water into the pot and wait for it to boil. Lower the heat and cover the pot with the lid.

Let it simmer for around 10 minutes until the ingredients become soft and tender.

Finish it off by adding salt and pepper for taste with a sprinkle of basil leaves.
