Udon Miso Noodle Soup
Ingredients:
- Either Hokto Bunashimeji or Hokto Bunapi, ends trimmed and separated
- 1 Pack
- Fresh Udon Noodles
- 1 Pack
- Chicken or Vegetable Stock
- 4 Cups
- Thinly Sliced Carrots
- ½ cup
- Snow Peas, sliced diagonally
- ½ cup
- White Miso
- 2 tbsp
- Spring Onions
- ½ cup

How to Make:

Step 1
Begin by boiling the udon noodles, drain and keep cool in refrigerator once it is cooked.

In a large pot, add water and the chicken stock to boil at a medium heat. Add and cook the carrots for 1 to 2 minutes until crisp.

Add the snow peas and cook until it is tender and still have a bright green colour. Then, add the mushrooms and other vegetables in the pot and cook for 30 seconds before removing from the heat.

Next, add the miso in a bowl and add one ladle of hot broth. To avoid the miso becoming gritty, mix the miso and pour it into the pot while the pot is not boiling.

Assemble by pouring the soup over the cold noodles. Sprinkle some spring onion and it is ready to be served.
