Japanese Style Spinach Risotto with Hokto Mushroom

Ingredients:
- Hokto Bunashimeji
- 1 Packet
- Hokto Bunapi
- 1 Packet
- Spinach
- 150g
- Rice
- 170g
- Olive Oil
- 1 tbsp
- Soup Stock
- 800ML
- Salt
- 1 tsp
- Soy Sauce
- 1 tsp
- Cheese Powder (Optional)
- 1 tbsp

Step 1
Begin by washing the rice and drain the water. Then, remove the root from the mushrooms, blanch the spinach in salted water and cut into bite-sized pieces.

In a pot, heat the olive oil, add the rice and slowly stir fry over medium-low heat until the edges of the rice grain turn translucent.

Add the soup stock, salt, soy sauce and let it simmer over low heat for 10 minutes.

Next, add the mushrooms in and simmer for 5 minutes.

Turn off the heat, add the spinach and stir gently.
